Mint Oreo Truffle
Servings: 50 whole macarons
Ingredients
Filling
- 3/4 stick unsalted butter room temperature
- 6 ounces cream cheese (this can be omitted and replaced with butter)
- 3 tablespoons brown sugar
- 4 teaspoons whole milk powder
- 2 teaspoons vanilla pudding mix (Instant) (Not prepared. Use the dry mix)
- 1 teaspoon vanilla extract pure
- 1 teaspoon peppermint extract This amount depends on the brand you buy. Start with 1/2 teaspoon and taste it.
- 2.25 cups powdered sugar
- 7 whole Oreos or Oreo type cookies (I like Glutino for a gluten free version) plus more for sprinkling on top ground in a food processor
Topping
- 1/2 cup semi sweet chocolate
- 1/2 cup milk chocolate
- 1 tablespoon vegetable oil
Or
- 1 cup white chocolate
- 1 tablespoon vegetable oil
Instructions
Macaron Shells
- You can use any plain macaron shells for this recipe. I like to add a little green food coloring for a nice green shell. Go here for my favorite shell recipe: https://michellesmacarons.com/french-macaron-recipe/
- Bake the shells and let them cool completely
Make the Filling
- Beat together the cream cheese and butter until combined
- Add the brown sugar, milk powder, and pudding mix. Beat until fluffy and it seems like the sugar is starting to dissolve
- Add the powdered sugar, vanilla extract, and peppermint extract and beat on high speed until it's really light and fluffy
- Add the ground Oreos and beat until combined
Prepare the Topping
- Melt the chocolate, add the oil, and stir until smooth
Assemble the Macaron
- Pipe the filling onto a shell and top with another shell
- Drizzle with chocolate and sprinkle with ground Oreos
- For some extra flare, you can add some colorful sprinkles on top
- Refrigerate until the chocolate is dry
