Remove the macarons from the fridge and dip the tops into the melted chocolate.
Refrigerate until the chocolate is no longer melted.
Once the dipped chocolate is hard, I like to drizzle more chocolate on top to make it look like a real truffle, but you could also melt some white chocolate, add a little pink food coloring, and drizzle that on top.
Put the finished macarons in an air tight container and put in the fridge for at least 24 hours to "mature".
When you are ready to eat the macarons, remove them from the fridge and let sit at room temperature for at least 20 minutes.
